Albanian-Style Stuffed Peppers: A Delicious and Nutritious Meal

  • 6 large bell peppers
  • 1 lb ground beef or lamb
  • 1 cup rice
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups water

Peppers are a staple ingredient in Albanian cuisine, and they are often used in a variety of dishes. Bell peppers are a great source of vitamins and antioxidants, making them a healthy addition to any meal. The ground beef or lamb provides a good source of protein, while the rice adds a hearty and filling texture.

To make the dish, start by preheating the oven to 375°F (190°C). Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse and set aside.

In a large bowl, mix together the ground meat, rice, onion, garlic, parsley, mint, tomato paste, olive oil, salt, and black pepper until well combined. Stuff each pepper with the meat and rice mixture, pressing down gently to fill completely.

Place the stuffed peppers upright in a baking dish and pour 2 cups of water around the peppers. Cover the baking dish with foil and bake for 45-50 minutes, until the peppers are tender and the filling is cooked through.

Remove the foil and bake for an additional 10-15 minutes, until the tops are golden brown. Serve hot, garnished with additional parsley and mint if desired.
